			1/10/20: Mashed in between 153-152. Initially collected about 5.25 gallons, eventually collected another .25. Boiled for 120 minutes with three pots; boil off not quite as vigorous as estimated (gut feeling said to let boil for additional 10 minutes). But efficiency was higher than estimated (60%).
O2 for 60 seconds and left for first twelve hours at low 60s, moved up to 65-64 for next, then up to 66 and 67 to finish.
1/24: Fermentation was stuck around 1.039 so pitched whole 12oz starter from 5g US-05 and 2oz dme.
2/4: first re-fermentation starter brought gravity down to 1.035 so pitched another starter from 6g US-05 and 2oz dme, but only brought it to 1.034
