Target Water Profile
Castle Rock, Colorado, USA
Notes
1.086 Target gravity at end of boil (before sugar)
2% Leifmans Kreik added at secondary. 2.5 gallons is 320 ounces. 2% of 320 is 6.4 oz of kreik needed.
fermentation 65-70 F 3 days
secondary 67 F 3 weeks
tertiary 67 F 2 weeks
Wort pitched at 68
Sucrose added after primary fermentation.
Bottled with dextrose and some saved back fresh yeast from the starter (~50M cells)
3.75 volumes CO2 original recipe - bottled at 3.0 due to exploding bottle risk :-)
Initial tasting notes after 1 month - Body seems lighter than original, might up mash temp to 155. Also color is more orange than ruby - along with a similar lack of "fullness" in the malt profile of the original. Might consider upping percentages of the specialty malts for V2. The goldings are perceptible in the nose, but just enough to remind you of dirty socks. Will push those back to 15 mins on the boil for V2.
