Notes
Discussions of the style in Radical Brewing and Zymurgy indicate this was traditionally a cleanly fermented style. However, Krennmair's "Historic German and Austrian Beers for the Home Brewer" suggests it was brewed with Lactobacillus, as Cottbuss's neighbors to the north did with Berliner Weiss. I don't want to brew it as a sour, but as a nod to this history, I'm upping the acidulated malt to provide a little tartness.
