I would typically use Magnum for bittering but since there will already be 3 partially used 1 ounce hop packs, I chose Mosaic. The comments I get from non-craft beer drinkers is that this is an easy drinking beer, not too bitter. I believe it is due to the fairly 'malty' malts yet enough drying from the roasted barley and rye to keep the finish from being to cloying balanced by hop varieties that are not overly aggressive and in a good balance on BU:GU ratio.
