Notes: Recipe made for Arsegan 50L all-in-one kettle. (Hopcat, Robobrew, etc.)
Mash in at 55 for 15 minutes.
Mash at 67C for 90 minutes.
Mash out at 78 for 10 minutes.
Fill kettle to 42 litres.
Remove 7 litres for sparge. (warm slowly on stove)
At mash in temp (55) add milled grains slowly.
Mash per above.
Two hops drops. At -60 minutes then at -10 minutes. 2nd hops is more "flavour" than aroma.
Steep final hops 15 minutes then remove and cool.
Aerate and yeast.
Using S-04 English Ale yeast (big starter!) and doing initial fermention at 17C. (3rd brewing using 15C.) Raising to 20C after ~3 days.
This is the 3rd brewing of this recipe with small tweaks. This time using CaraRed instead of CaraMunich and returning to Pale Ale as the base instead of Pilsner + Vienna.
The grain wasn't properly milled on the 3rd brewing. Lost efficiency and added sugar to overcompensate. 6.3% now. But the recipe is sound.

Notes: 11/29/2020-FG sample is really dry. Scottish Export recipe from @BrewBuzzard on HomeBrewTalk.com. Cooled to 80F with IC and then put onto the Bad Moon Stout yeast cake (WL004-Irish Ale)-fermented in oak cubes, also. I changed the grain bill and hops slightly to fit what I have available. Came out 5 points higher than expected, so +1/2% ABV. Because of bulk buys, using existing yeast culture, etc., this only costs $10-13 per 5 gallons. |

1. 0 min – Add 4.5 gals water, raise temp to 140.0° F (60.0° C)
2. 1 min – Mash In, add grains, maltodextrin (2 min rise, hold 130.0° F (54.4° C), raise to 155° F (68.3° C) for 60 mins
3. 60 min – Mash Out (sparge) at 168.0° F (75.6° C) for 10 mins
4. 70 min – Mash complete
Boil:
1. 0 min – Add Ingredients
a. 1.0 tsp – Amylase – [Enzyme]
b. 1.0 tsp – Yeast Nutrient
2. 60 min – Add ingredients
a. 1 oz – Northern Brewer [8.5%] – Boil 30.0 min – [Hop]
b. 0.25 oz – Cascade [6.0%] – Boil 30.0 min – [Hop]
3. 90 min – End of Boil (place ¾ cups of wort in reserve for priming)
TOTAL BREW TIME: 2 hrs, 40 mins
Fermentation and Conditioning:
1. Force chill to 65° F (18.3° C)
2. Transfer to 5/6-gallon carboy (glass fermenter)
3. Add Dry English ale yeast (primary fermentation) @ 65-70° F for 3 days to 1 week
4. Transfer fermented lager to transfer vessel, clean yeast from glass fermenter and return beer to clean fermenter (secondary fermenter).
Add ½ Wilamette and ½ Domestic Hallertau pellet hops (dry hop). Add ¾ wort as primer. Let sit for 3 weeks.
