Notes: Mill grains twice, once at 0.08 inches and again at 0.05 inches.
Start mash at 125F for 15 minutes then raise temperature to 147F for 60 minutes. Raise temperature to 165F and mash out. Sparge with 2 gallons of 170F water.
Boil for 60 minutes following hops schedule. Chill to 170F and add whirlpool hops, steep for 20 minutes and chill.
Ferment at 60F for 7 days or until fermentation slows then raise temperature to 65F for 2 days or until fermentation completes then rack into secondary.
Keg and carbonate to 3.5 volumes. |

Notes: Homemade dandelion honey:
1. collect 800g of yellow country dandelion heads
2. add dandelions to 3L water and boil 1 hour, eventually add lemon balm or lemon sauce
3. let rest for 24 hours and strain to another pot
4. boil for at most 1 hour and add 2,5 kg of cane sugar
5. collect around 2,5 L of honey to jars, close jars and let cool down at least 24-hour
CZ – domácí pampeliškový med:
1. posbírej 800g zlutých pampeliškových hlav
2. dej pampelišky do 5L hrnce, přidej 3L vody a hodinu vař, eventuálně přidej meduňku nebo citronovou šťávu
3. nech odpočívat 24 hodin a pak sceď
4. znovu nanejvýš hodinu povař a přidej 2,5 kg stolního cukru
5. výsledkem bude 2,5L medu, který přelij do zavařovaček, uzavři a nech dalších 24 chladnout |
