Notes
Mill grains twice, once at 0.08 inches and again at 0.05 inches.
Start mash at 125F for 15 minutes then raise temperature to 147F for 60 minutes. Raise temperature to 165F and mash out. Sparge with 2 gallons of 170F water.
Boil for 60 minutes following hops schedule. Chill to 170F and add whirlpool hops, steep for 20 minutes and chill.
Ferment at 60F for 7 days or until fermentation slows then raise temperature to 65F for 2 days or until fermentation completes then rack into secondary.
Keg and carbonate to 3.5 volumes.
