Notes: ワイルドイーストを殺すため、甲州80kgは皮ごとジューサーにかけ、一度、低温殺菌(70度で10分)する。
①半量40kgは、柄・皮・種ごとワイン酵母で1週間発酵が止まるまで発酵させる。(醸し)
②半量40kgは、皮・種ごと果汁を冷蔵保存しておく。
ラカンセアサワーを作り、①を発酵中の麦汁に入れる。
発酵後、温度を下げて②を入れ、熟成させる。
ぶどうを含めて、約7%の仕上がり。

Notes: - Steep grains for 20 min. as water heats up
- Bring wort to a boil, remove from heat, stir in extract
- Return to boil, add fuggles hops, 60 min. boil
- With 20 min. remaining, add EK hops
- With 10 min. left, add and stir lactose
- With 5 min. left, add nutmeg and cinnamon
- Cool wort to 70 degrees and pitch 2 oz. of yeast
- Ferment at 70 degrees
- After fermentation, transfer to secondary and add 4 oz. of maple syrup
- Can add more nutmeg and cinnamon or vanilla to secondary if desired

Notes: During mash prepare the citrus peel
Blanche 1 orange or grapefruit peel and half a lemon's peel:
- Add peel to a pot of cold water
- Heat water to boil
- As soon as the boil starts remove from heat and strain peels
- Repeat this process 3 times
Make a simple syrup with 70g of sugar and 70g of water, add the peels and simmer for 45 minutes
place the peels somewhere to dry for 24h
70g sugar in 70g water and simmer for 45 minutes
dehydrate/ bake until hard/ 24h
Add remaining syrup and Juice to wort post-boil |
