Notes: Ferment at 65 for 2 to 3 days then raise the temperature by 1 degree per day until 72-75 degrees is reached.
Add Cherries and almond extract at day 4. 2 lbs per gallon of cherries, which should ferment in the beer for about a month. Add 1 drop (no more, as per Randy Mosher) of almond extract can be added to primary. |

| Notes: Since this recipe will be used to also make another beer (Belgian Tripel) with a higher ABV (2 - 5.0 gal. batches), 6.25 gal. of the Belgian Blonde beer was pulled off for cooling and racked to the carboy. This beer was then boiled an additional 15 min. after the late addition Candi sugar and hops were added. |
