5 Madagascar vanilla beans, split, scraped, and diced
3 large dried ancho chilies, split open, seeds removed, torn apart, included 1 tsp of reserved seeds
6 oz - Organic Raw Cacao Nibs, baked at 250 for 20 minutes (or until fragrant), allow to cool
All ingredients were added to tincture with vodka and stored at room temp for roughly 6 weeks, shaken occasionally.

Packaging:
A Keg, fitted with filter around dip tube, was dosed with tincture, solid ingredients were placed in fine mesh bag and thrown in keg. Finished stout was racked via fermentor spigot to keg through liquid out post; keg was then purged and allowed to age at room temp roughly 7 days. Beer was then racked to a serving keg via jumper between liquid posts; keg was purged and hooked up to gas in the kegerator ~10 psi for 7 further days.
Tasting 12/28/22
Appearance: Deep reddish brown, black from face on, the stout is pale on the edges. A thin ring of tight khaki foam hangs around for the whole experience; clinging to the glass as go
Aroma: Initial smoked pepper flavor, vanilla root beer float, earthy bittersweet chocolate, malt ball, I don't get vanilla face on but suspect it's supporting the other characters
Flavor: wow, an attack! Gentle smoke combines with roast on the front, gentle sweetness carries through with cocoa and vanilla on the swallow. Wow, finish is griping with gentle heat and vanilla cola. Very tasty.
Mouthfeel: medium minus; a memorable and quick experience on the palate
Overall: I'm really proud of this one! This is by far my most successful use of adjuncts, and most of them are in line with where I wanted them. I think this recipe would really shine with cinnamon, and I want to rebrew this just to include it. I think we could almost use more vanilla and I could stand more heat from the chilies actually. |

Notes: 2.0 oz (57 g) coarse ground coffee (steep 2 minutes at knockout or add toddy* [see below] to secondary)
Place ground coffee into the doubled muslin sack or pantyhose inside jar, then stretch around the outside of the jar.
Fill with 1.5 cups (354 mL) cold water and put lid on tightly.
Leave in the refrigerator for 24 hours. After 24 hours, open lid and lift out sack of coffee.
Pour out the remaining coffee toddy, leaving behind the dregs (last coffee bean bits) behind.
Add to secondary before transferring from your primary.
If you only have a primary, put the toddy in before bottling, or if you keg, the Cornelius keg upon transfer.
Important note: The ideal ratio of coffee to water is 1.0 oz (28 g) coffee to 8.0 fluid oz (237 ml) water. |

Notes: This started as the sierra nevada pale ale clone that's been copied 100 times. I liked it but felt like the hops needed balancing to be really great. This my third attempt at a great IPA. I tried to get omega's hothead for yeast (voss kveik was my first choice but I can't keep it warm enough), but they had just sold the last of it. So I decided to try Imperial, a brand they just got in stock at the local brew shop. Something fruity was the goal. Any yeast that yields fruity results should make a good beer.
Basically, it's an IPA with Magnum bittering, perle half way through for that spicy piney citrus backbone, and a mix of cascade and azacca for a fruity/citrusy flavor complimented by a fruity yeast. |

A simple grain bill of only pale malts provide a stage for the amazingly tropical Azacca hop. Imagined as a beer full of flavor yet pillowy soft and easily drinkable as we transition to the warmer months here in Michigan. Fermented with a classic American Ale yeast strain and only Azacca hops, it exhibits flavors and aromas of citrus and very ripe mango, with notes of orchard fruit (pears, apples) and pine needles throughout. A tight effervescence contributes to a beer that softly dissolves on the palate and leaves your mouth coated with a pleasing gentle hoppiness. Happy Spring! |
