Notes: Crush grain, mash at 152 for 60 minutes. Target a PH of 5.2, I used lactic acid to adjust this. I used distilled water and add back in minerals. This was batch sparged. Boil for 60 minutes, cool to 70 degrees F, then add the appropriate amount oxygen, pitch the dry yeast and drop temp to 67 degrees F
1st 2.5 oz dry hop additions are at high krausen, second after fermentation is done. Raise temp if needed to clean up yeast flavors, cold crash after 3-5 days of second dry hop charge. Burst carbonate, and enjoy.

Notes: This recipe uses reverse osmosis (RO) water. Adjust all brewing water to a pH of 5.5 using phosphoric acid. Add 1⁄2 tsp. each of calcium sulfate and calcium chloride to the mash.
Mash the two base malts for 60 minutes at 154 °F (68 °C). Add dark and crystal malts, recirculate for 15 minutes. Then sparge and collect 6.5 gallons (24.5 L) of wort. Boil the wort for 60 minutes, adding hops at the times indicated in the recipe.
Chill the wort to 64 °F (18 °C), pitch the yeast, allowing temperature to rise to 68 °F (20 °C), and ferment until complete. Dry hop the beer for five days. Rack the beer, prime and bottle condition, or keg and force carbonate. |

Notes: Treat water with the MSB before brewing to remove chlorine/chloramine. 0.5g per 25L
Make a 2L yeast starter a few days in advance and cold crash before brew day
Decoction mash is optional
For the decoction mash remove a large pan (approx 4kg) of grain and being to the boil then return during the heating cycle between steps
Pitch the yeast at 8-9C and ferment at 9-10C for 10-14 days or until the fermentation slows to almost nothing
Make sure you do a diacetyl rest for 3-4 days at 18c to clean up the flavours
Cool down to 10 to add gelatine
Cold crash a 0C for 7-10 days then transfer to keg
Leave it for at least 2 weeks to carbonate and smooth out before drinking.
Brewed with wyeast 2308 or White labs WLP860. Make sure you do a starter and give it a real boost of yeast to get a quick and clean fermentation.
Blind taste tests 3 out of 4 preferred this to real Camden hells and only 1 picked out the original as their preferred beer. You can tell a slight difference but it’s marginal and most people actually prefer this beer I’ve just tweeked the hops a little over time to get it even nicer.
Give it a try |

good notes from the brewer here: http://www.homebrewtalk.com/showthread.php?t=441676&page=2
Just for fun, I emailed SN about what Lovibond caramel malt they use, and what SRM they target, and they got back to me!:
"Thank you for reaching out to us and for expressing your interests in Sierra Nevada. We are very happy to hear of your pursuit to clone our Celebration Ale! After reaching out to our brew staff they were able to respond with an answer to your questions which I have copied bellow:
We use 45 Lovibond Caramel Malt.
Target is 20 EBC or 10 SRM on the color.”

Notes: 8oz of lactose altogether -- duped in recipe for accurate final ABV.
4oz in Primary, 4 oz for priming. If we decide to force carb, this latter lactose may be better suited being added with the vanilla beans.
Vanilla beans to be added 2 degrees Plato before final gravity, or at final gravity if necessary. Remove before bottling/kegging.
YEAST: 68 optimal, raise to 75 during last half of fermentation is possible. |
