Step by Step
Mill the grains, then mix with 5.1 gallons (19.2 L) of hot strike water to achieve a single infusion rest temperature of 155 °F (68 °C). Adjust mash pH to 5.3–5.4 using lactic acid, if needed. Hold at this temperature for 60 minutes. Mashout to 170 °F (77 °C) if desired.
Vorlauf until your runnings are clear before directing them to your boil kettle. Batch or fly sparge the mash and run-off to obtain 6.5 gallons (25 L) of wort. Boil for 60 minutes. Add the Warrior® **incrementally from 60–30 minutes**, then add the Simcoe® incrementally from 30–15 minutes, and finally, add Palisade® incrementally from 15 minutes to the end of the boil. Also, at 15 minutes left in boil, you may want to add either Irish moss or Whirlfloc as fining agents. At 10 minutes left, add the corn sugar.
After the boil, add the flameout hops indicated and whirlpool for 10 minutes before rapidly chilling the wort to 63 °F (17 °C). Oxygenate with pure oxygen and pitch a healthy count of yeast. Allow the beer to free-rise to 68 °F (20 °C).
Once primary fermentation is complete, dry hop with all three varieties. After 3 days, drop the temperature to 55 °F (13 °C) and after 24 hours, rack the beer to secondary. If oaking, add it now (1.1 oz./30 g of medium-toast American oak) and age for 14 days. Bottle or keg the beer and carbonate to approximately 2.5 volumes. |

This strong-ish American amber ale is built for the cold: a substantial gravity for snowy weather, but a fast turnaround so you can get some holiday cheer from fermentor to pint ASAP. Malty but not too sweet, just enough bitterness to balance, a de nite but not overstated citrus hop pro le (bolstered by real citrus!), this is far from your normal holiday ale.Its saturated copper-red hue comes from a blend of malts: pale choco- late adds a warm, toasty dimension and suggestions of black tea to the g-and-toffee pro le of two authentic English caramel malts. The earthy and dark dried-fruit char- acter of the malt segues into bright oral citrus, thanks to the resinous lime-and- owers velvet punch of Styrian Goldings (Celeia) and a charge of sweet orange peel at the end of the boil!

Notes: had this shmaltz st lenny's belgian double rye ipa a couple years ago and it was awesome. only saw it in the store a couple times. never really could find a good clone until now. i dont think shmaltz even makes this anymore.
recipe was originally posted on their site (no longer there) and then scaled down by a homebrewer and posted on hbt. pasted below.
this recipe i put in almost exactly. theres no fawcet crystal ii so i used crystal 60. the recipe also says crystal 60/80 so i put in 80 but in practice i would probably combine the two and just just the 60.
also i took liberty in estimating efficiency at 77 which put the beer at 10%.
mods i would need :
* scale up for my system efficiency
* substitute extract for at least part of it. think i would still need to mash though at least for the rye and wheat. might need to use some base malt in the mash too to have enough diastatic power
* hops are a little crazy. could probably simplify and just use one or two or three hop varieties
* would need a decent sized starter

Notes: Ran off 7 gallons into boil, ended up with approximately 5.5 gallons of wort. Don't think I got as much wort as possible since rye seemed to clog mash tun a bit. Boil off was not as much as estimated by the calculator.
Only 2 gallons from first runnings, 5 from second.
All water used was spring water from Food Lion.
Actual OG 10.056, 2 packs of rehydrated yeast pitched at around 67 degrees, stirred for 5 minutes. |
