Notes: This is a multi-step mash regime.
Mix Belgian wheat, two-row malt, and dextrin malt into 15 qts. (14.2 L) water to settle mash temperature at 110 °F (43 °C) and hold for 15 min.
Raise the temperature to 148 °F (64 °C) and hold 15 min.
Raise the temperature to 155 °F (68 °C) and hold for 35 min.
Raise the temperature to 168 °F (76 °C) and sparge with enough water to collect 6 gal (23 L).
Bring to a boil and add first hops addition. Total boil is 60 min. Boil 30 min. and add 2nd hops addition.
Boil 15 min. more and add Irish moss.
Boil 5 min. more and add yeast nutrient.
Boil 10 min. more.
Cool and pitch yeast at 70 °F (21 °C).
Hold fermentation temperature between 66 and 68 °F (19 to 20 °C).
Transfer to secondary after kraeusen falls and condition for 10 to 12 days.
If bottling, prime with 3/4 cup corn sugar, bottle, and condition further at room temperature for two weeks. |

Notes: Pitch the yeast at 68 °F (20 °C) and hold the temperature steady for the first two-thirds of fermentation. This moderate temperature keeps the esters and phenols from getting out of hand. As the fermentation slows, slowly raise the temperature to 72 °F (22 °C) over the last couple days, which increases the activity of any still-active yeast cells and helps ensure complete attenuation. Notes: Vanilla Porter, brewed this one a bunch but used Vienna Malt for the bulk of fermentables for this one instead of 2-Row because that's what I had to get rid of. Also, the brew store was out of flaked barley, so this one got flaked oats instead. 3 Madagascan (Bourbon Island) vanilla beans split and scraped added to the secondary fermenters along with a cup of bourbon to saitize them. |

Carafa II - A German dark de-husked malt for authentic German dark Lagers such as Dunkles and Schwarzbiers. Can also be used and experimented with in other styles where a more mellow roasted grain flavor is desired.
Victory - Gives a warm toasted nutty flavor which is great in Nut Brown Ales. Its clean flavor makes it well suited for ales and lagers alike, use in small amounts to add complexity and warm color.
Crystal, 120L - used in Red Ales and in beers where you want a heavy caramel flavor contribution. Will contribute deep red hues to the color of your beer.
Munich - increases body, aroma, malty sweetness and slight biscuit flavor.
Caramel 80 - Caramel 80 is a medium dark crystal malt with a deep reddish hue and pronounced flavors of dark caramel with hints of raisin. A great caramel malt for many styles (especially red ales), use 3-15% for enhanced body, foam stability, color, and flavor. 80°L
Tasting notes:
Mellow roasted grain flavor, not sharp.
Heavy caramel. Malty sweetness, with slight biscuit profile. Woody on the tongue from low bitterness Northern Brewer hops (German Variety).
