Notes: . Honey from backyard hives heat water to 95 deg F - add honey and mix - cool to 70 deg F Add 35 raisons + and add + 1/4 tsp yeast energizer + 1/8 tsp yeast nutrient. Add yeast (no starter). Refractometer gave an Original S.G. of 1.18
Day 2 - add 1/4 tsp yeast starter + 1/8 tsp y nutrient
Rack wwek 4 (slow kick in of yeast) - add crushed coriander seed -ferment out and at bottling 3 - 3.5 oz corn sugar dissolved into 3/4 cup of water - distribute through bottling bucket.
Lovely sparkling mead after 6 mo of aging, despite some "sampling" along the way. Time to gear up to 5 gall w/ tweaks |
