The taste changed so much throughout the fermentation but the final product was good (4 stars) I think we'd up the vanilla (we added 3 tsp of vanilla paste - I can't remember what kind) and I'd up the hops in the whirlpool - probably double at least. The main flavor component that comes out is the key lime....so it's more of a lime NEIPA. Good beer but not exactly what we were shooting for. No graham cracker or cinnamon in the final flavor. But great color and mouthfeel.

I am planning to brew this tomorrow. I have only been brewing for a year and just had a question about the graham crackers. Will they be in the initial mash or added to the carboy after fermentation. I'm assuming they will be in their own steeping bag. I will be converting this recipe to extract as I don't have the equipment currently for All Grain. Thanks for your help!
