Notes
Built from Hill Farmstead Everett. For special versions,consider using: 1 lb honey, cold press coffee, vanilla, or coco nibs. Prepare a 1.5L starter (1.050) the day before (stir plate) using two packets of yeast. Consider using 1028 (london ale). Everett has a high finishing gravity. Manage the dark grains (C90, Chocolate, and Roasted Barley) by adding them to the last 5 minutes of the mash. Mash at 158 then dark grains, (which will drop the temp) hold 5 min and sparge. Ferment 3 weeks and bottle (no secondary).
This version uses C120 since there was no C90 at the shop. Wyeast Thames Valley or Burton ale is excellent with this recipe.
Try boiling the first gallon or two separately to a think syrup to caramelize and add to the main boil
