Notes

about 7 gallons of wort into the barrel (cab barrel) with the 3711/dupont strains fermenting in colder weather. Whatever is remaining I would like to do a spontaneous fermentation and rack into a one gallon carboy if the character is worth the effort to build and put it in with the secondary after the primary cab barrel if worth it?
