Notes
This is my first IPA: I was attempting a highly bitter, IPA similar to a Southern Tier 2X but with varied hops.Notes from first brewing:
164 strike water cooled a bit more than expected (hit 147 for first 15 mins, until i could get 12 cups of boiling water added to bring up to 149 for remaining 50 minutes).
intended to sparge at 170, but Sparge water (in HLT) also cooled quickly, started fly sparging around 165, but fell quickly to 158 before heating back to 170 to finish last gallon over 30 minutes.
Started at approx. 5.5-6 gals at 1.064 into fermenter. Aerated wort with paint stirrer for about 4-5 mins before pitching yeast.
11 days in primary . racked at 1.008 SG.
10 days in secondary (dry hop), with last 3 being cold crash before racking to bottling bucket.
used the east kent golding hops at dry hop just because i had it lying around and wanted to use it up. we'll see how it turns out. Next time, I want to try this with amarillo and simcoe (like sculpin uses) late in boil and dry hop. use homegrown centennial and cascade for early addition and bittering.
SG ended up at 1.005 (much lower than expected). With lower volume than expected, this ended up being a stronger (7.9 ABV) IPA than I thought.
