MASH WATER VOLUMES: Total Salts Needed: Gypsum - 4 g Salt - 1 g Calcium Chloride - 4 g Baking Soda - 1 g Treat 7 gallons of strike water with: Gypsum - 2.34 g Salt - .585 g Calcium Chloride - 2.34 g Baking Soda - .585 g Heat strike water to 172F. (18F above target mash temp of 154F) (water heater temp reading is generally 5F lower than actual water temp) Use 5 gallons to mash. Add 1 tbsp of 5.2 Stabilizer directly to mash at dough-in. Top up sparge water to 7 gallon mark and treat the new 5 gallons with: Gypsum - 1.66 g Salt - .415 g Calcium Chloride - 1.66 g Baking Soda - .415 g Heat sparge water to 175F.
