Notes

Straightforward easy-drinking saison. Single-hopping with sterling. I'm testing a new bag of hops from Northwest Hops, anticipating pleasant noble spice with orange citrus.

Brew day 24Mar2025:

  • Blending mash water: 2.25gal tap + 1.25gal RO = 3.5gal.
  • 1.8ml lactic. Est pH = 5.49. Act. pH = 5.56. Added 1.6ml extra lactic. Act. pH #2 = 5.34.
  • OG = 5.7gal @ 10.8 brix (1.043). 81% eff.

    Kegging 15Apr2025:
  • FG = 1.000.
  • Noted astringency on the gravity sample. The initial high mash pH from including tap water may have been a mistake. Will taste again when carbonated and chilled.

    May tasting notes:
  • The sterling hops are really nice. Excellent choice for saison. Unfortunately, astringency remains in the beer. No messing around with tap water mashing pale beers going forward. The usual calculator margin of error (estimates low most often) can't be relied upon to respond predictably when blending tap and RO in pale ales. Too many variables, with risk of exceeding pH 5.6. Additionally, ensure sparge strike water is no higher than 170.
