Salts to mash and sparge RO water. Mash water 8 gallons (3.75 gallon for barley mash and 4.25 gallons for Cereal wheat mash). Sparge water is 9.5 gallons. Mash barley with 3.75 gallons at 125F for 15 to 30 minutes and in a separate cereal mash add Raw milled wheat to 4.25 gallons boiling mash water. Stir for 15 minutes to gelatinize. Turn off heat while stirring to avoid scorching the wheat. Then add hot gelatinized cereal mash to barley mash target temp 153F for 45 to 60 minutes (watch your temp so you don't overshoot). Add rice hulls and sparge as normal. Collect 12 gallons and boil until 11 gallons. I use a steam slayer so 1.5 hour boil = 1 gallon evaporated.
