Notes

West-coast IPA from yore, with a bit maltier backbone than many these days.

Procedure:
Mash at 152F for 60 minutes. Recirculate until it runs clear, then run off into the kettle. Sparge and top up as necessary to reach pre-boil volume of 6.5 gallons (depending on your system).

Boil 60 minutes, adding hops according to schedule above. After the boil, turn off heat and whirlpool. Let steep 15 minutes with the last hop addition.

Chill to about 65F or as close as you can get it, and then aerate and pitch. Ferment at 69F for about 6 days, then dry-hop. Wait another 3-5 days or until it hits terminal gravity. Crash, package, and carbonate to 2.5 volumes of CO2.
