possibly add Cocoa nibs(or adjust Choc and Black Ratios)
Possibly add Lactose for sweetness to counteract the Rasp tart?

Semi dry raspberry stout. Very interesting. Lots of raspberry aroma and a smooth taste.

Overall, people seem to like it and it has sold well.

this was actually a very good beer once the raspberry settled down and matured a little bit. initially it was overly forward raspberry, but over time the raspberry pulled back until at the end it was very subtle and nice. it had a nice raspberry aroma mixed with hits of roasted malt and chocolate. the flavor was well balanced with chocolate and roasted malts leading followed by raspberry in the finish. the raspberry flavor lingered just long enough for you to notice it and then disipated.

next batch pitch the raspberry mid fermentation to help reduce the initial punch and mellow it out.

i would also adjust the recipe to add more chocolate and exchange some of the black malt for roasted barley.
