Total Water Needed [?]: 8.94 Gallons, 33.82 Liters
Mash Water Needed [?]: 5.65 Gallons, 21.4 Liters
Sparge Water Needed [?]: 3.28 Gallons, 12.43 Liters
Strike Temperature [?]: 164.33 F, 74 C
Pre-Boil Wort Produced [?]: 6.48 Gallons, 24.51 Liters
= mash 7 sparge 1G each sparge

homebrewing.com had 1 more G for sparge overall

end result needed .25 more for each sparge so right in the middle of the 2 for overall water.
note: 7 G of water and 13.5 lb of grain takes it just over malt pipe with add on piece, resulted in grain going into pump and clogging it.

Notes

had calculated ibu w wrong starting vol of water. changed it from 19ibu to 80. I addume I did the 3oz of hops but dont recall

Add more of all spices maybe double for next time
Make carafa, crystal malts higher percentage (up to 10 or so) + special B is really good = all add body as well.
OG of 1.25 likely a bad reading 1.15 more likley

put into carboy and it was very full. pitched yeast w 1/5 day starter and it started like crazy very fast, pushing bubbles out, attempted to remove lid realized that was not going to work well. put it back on but was leaking from massive pressure, decided to leave it per call w Sean. Next day leak done as it settled down.

FUTURE: double check carboy size, maybe divide into 2 if massively full. I thought I had 5.5 G but maybe it was more.

Fermented down to 1.033 from 1.15 OG estimate =15÷

Had 5.5+ and fermentation went crazy lost likely .5G. Next time ferment on lower temp range instead of room temp.
ADDED 1.5 OZ Vanilla extract
.5 Oz of almond extract
5 ground up cinnamon cloves soaked in 2 of whiskey
