Another decoction mash using a Thermostable Enzyme to extract some sugar from the purple corn.
This is a copy of the Spotted Cow Clone (https://www.brewersfriend.com/homebrew/recipe/view/266032/spotted-cow-clone), but with purple corn added. (Now that I look back at it I copied it down wrong, lol.)
I use a Grainfather to achieve these temperature hikes. To cool down I keep 2gal of water in the fridge and add it after the decoction step.
