Be wary of the high oil content here and be sure to get the unsweetened coconut. I toast my coconut at 300F until it is lightly browned, and toss it in paper towels between roast cycles to get rid of the oils. This shouldn't take more than 10-20 min. Then throw in muslin bag and add to the secondary or keg for 10 days.
