Notes

Version #1Started Ferm at 62ºF, rehydrated Safale 04 in Santo Domingo tap water, activity at about 15 hours. Dry hopped 5 days after pitch, reduced airlock activity. Bottled exactly 5 gallons, primed with 5oz corn sugar. Brewed 3/13/21, bottled 3/31/21.

After about 2 weeks in bottle-- great-- lots of foam on the pour but fine foam and Belgian lacing. Great aroma-- maybe the Vic Secret? Would repeat recipe little less carbonation maybe. (Bottle conditions at about 82º F Santo Domingo.
