Notes

Brewed 1/23/21. 155...150.9. Nailed the additions. The spruce tips smelled good. OG 1.058, had good volume. Percolating strong the next morning. Slowing day 3, upped temp to 71. Still going day 8. Finally looks done day 9, soft crash to 50. Dry hop day 10. Cold crashed day 11. Transferred day 13. Smooth, killed the 10lb cylinder. Sample was excellent. FG 1.012. Added 3.5 oz table sugar with big syringe 2/5/21. Tapped 2/20/21...Delicious, the spruce is present but subtle. Almost a sweet pine. Nice bitterness. This was an excellent beer. I wouldn't change a thing. Kicked 3/5/21 (bottled 6).
