| Notes: OG was 1.064. After racking ~4gal to fermenter, due to kettle screen clogging, poured ~2g remaining hot break material into sanitized Anvil Brew Bucket and waited 30 mins for break to settle, then drained about 1.5g into fermenter. Fermenter had already been oxygenated & pitched. Set fermenter at 60* for first few days. |

HOPS
New HBS (Bear Roots) did not have more Amarillo (for bittering), so substituted Chinook. Also did not have Saaz, so substituted Sterling.
Candi Syrup added at 5 minutes before end of boil.
YEAST
2L starter with one packet of WLP570 (Belgian Golden Ale) as the date was a bit older. First 20 hours or so yielded no bubbling, perhaps because ambient temp was only about 56F. So went to White Labs and got a much fresher WLP550 (Belgian Ale) and added to fermenter.
Put into fermentation chamber at lower end of temperature and raised slowly over the next 10 days or so. Cold crashed for about 5 days (longer than anticipated as I had to replace the kegerator).
