ill share a grainier giunness clone recipe ive crafted myself its one of the best ive ever made and ive also made a variation that has weed
(with wead)
step 1 : cold wash 5 ounces of wead din 5 gallons of ice water stir for 30 minutes use water in step 2
(wihtout weed begin at step 2)
step 2: 5lb 2 row malt (6row or nay base malt works)
1lb crystl malt (or any pilsner style malt)
1lb flaked rye
wrap in cheese cloth for a process called sparging
in this process you will submerge the malt to dissolve the sugars out of the grain this is done at an exact temeprture to achieve good results and proper foam on the head of the beer
sparge the cheescloth sack full of grains at 180 degrees fahrenheit for 60 minutes
batch sparge until volume of 5 gallons is reached
(batch sparging is a process of using the same bag for multiple batchs)
add 1 liter brewed coffee
1 cup molasses
4 ounces cocao powder
4 ounces willamette hops
boil 2 minutes
mix tap water with brown sugar and must to create a yeat starter, start cuvee yeast in an airlocked conatiner allow yeast to proof while waiting for the must to cool down all the way
allow at least 6 hours to cool
before you
transfer to glass carboy
attach air lock
pitch yeast at room temperature
it ferments for 17 days
on the 17th day befor bottling add 1 cup of brown sugar to you 5 glaoon batch to prime for natural effervescants
natural effervescents is a process where you allow the beer or wine to ferment in a close pressurized environment so that it can self carbonate
after adding the brown sugar it is bottled with a siphon or a drink dispenser into sterilized bottles
then you wait exactly one month before putting them in the refrigerator |

Clean Robobrew the night before. Fill with water to save time in morning.
Fill with 24 liters and start heating to 152 F using both burners
[leave the malt pipe out at this time]
Check actual temp with thermometer--might have to raise a bit
[gently add in malt pipe allowing water to soak through]
Slowly add in grain and stir in
Put on lid and let sit for 60 minutes - ONLY USE 500 W burner
Recirculate pump throughout this process.
Bump up heat to 158 F for 15 minutes
Heat 8 liters of tap water on stove as sparge.
Lift grain out of liquid, slowly poor in sparge water, let grains drain
Bring to vigorous boil (220-225 F) - NO LID FOR BOIL
Let boil for 5 minutes before adding hops
After hot break, add in the sugar
Watch carefully for boil overs / keep spray bottle handy
Clean and sanitize fermenter, lid, airlock, siphon, hydrometer
[While brewing, fill old bottles with sanitizer and put cap on them so they are ready for bottle day in a few weeks]
15 ML STAR SAN W/ 5 Litres Water
Recirculate for 5 minutes during boiling to sanitize recirculation arm / or just put in sanitize solution
Add in hops at intervals as directed by recipe.
Everything that touches after this needs to be sanitized.
Put stopper into fermentor lid and use as handle so not touching the inside.
15 minutes before boil ends add in immersion chiller [this sanitizers the chiller]
Cool wort to 70 F
Transfer to sanitized fermenter and pitch yeast
Oxygen is good at this stage / shake or stir to allow oxygen
Collect some and take original gravity reading.
Get final log reading of quantity from fermentor. 1 L remains in robobrew once the pump can't pump any more. This can be updated on bottle day if needed.
Fill air lock with starsan solution if possible
Ferment for 2 weeks at 20C
Then bottle or keg
[For clean up -- leave the chiller in the robo brew. Fill with lots of water and cleaner and just let soak. Pump water into sink. Goal is to try to avoid spilling wort all over kitchen] |

Dette er i stor grad oppskrifter fra ganske tidlig i craft beer-æraen, der mange av vinterølene var i en litt mer klassisk (engelsk) winter warmer-styrke i USA (rundt 6% ABV). Mange av ølene ligger nærmest en slags amerikansk brown ale stilmessig, men er heller ikke så langt unna en (svak) engelsk strong ale eller mørk strong bitter/ESB (bare med lavere bitterhet). Dette gir nok en veldig pintable, men maltprofil-messig også ganske raus/kompleks jule-/vinterøl.

Krystallmalt: 0,79 kg på 191 EBC.
EBC: 45,75
Gjærtype: WLP002 er den mest brukte
Bitterhumle: Willamette er den mest brukte

Late hops: Tettnanger mest brukte (hvis US Tettnanger - mer lik Fuggles?), deretter Fuggles/Styrian Golding, deretter EKG, Hersbrucker, Willamette ("amerikansk Fuggles") og Mount Hood

Har litt dårlig erfaring med WLP002 i fat (fortsetter å gjære ned ølet til veldig lav FG når den virvles opp), så går heller for WLP005/WLP007/BRY-97/New England/Verdant/S-04.

Dette ølet kan fungere som utgangspunkt for eksperimentering med utbytting av enkeltingredienser. Som f.eks.:
- Ulike humler: East Kent Golding, Fuggles, Hersbrucker, Mount Hood, Tettnanger
- Ulike gjærtyper: WLP005/WLP007/BRY-97/New England/Verdant/S-04
