Born on 9/5/23.
On 9/11, add Mango puree (3 lbs.) after active ferment and gravity reading is at 1.020 or below.
On 9/18 take gravity reading (1.014) taste (good mild Mango flavor) and set out at room temperature.
On 9/20 add 1.25 oz of Habanero Tincture of (2) chopped Habaneros soaked in Vodka. Add muslin bag of 2 chopped Habaneros to fermenter.
On 9/20, add 1 oz. of Azacca hop directly to fermenter.
On 9/22, cold crash at 32 degrees for 2 days.
On 9/24, Keg.
Ready to drink on 10/8/23. Add more Habanero (if desired) to keg.
