1.Very easy to make -- simple grain bill and mash schedule/hop schedule.
2.Yeast does attenuate dry when held firm at 62 degrees, so making a note of that. The dryness is good for a Irish Red Ale, and this is good -- 6.2% is a hair on the high side for the style. That is the only thing. Possibly adjust the grain bill for the equipment for efficiency/attenuation.
