MASH:
Strike Water 76°C 15 litres
Sparge water 75°C 18 litres
Efficiency: 65% approx.

FERMENTATION:
Day 1: (Week 1: Friday)

  • OG 48.34
  • Pitched x2 packets, ie. 23g of Safale04 yeast
  • Added 0.3 mg/l of Zinc (Yeast Nutrient from a Zinc Chloride solution)
  • Fermented for 4 days @ 18.5°C

    Day 4: (Week 1: Tuesday)
  • PG 9.76 @ 96 hours (analysis by Anton Parr)
  • ABV 4.99%
  • Dropped temperature to 14°C for Diacetyl rest.

    Day 6: (Week 1: Thursday)
  • Transfered to secondary (noticed lots of large clumps of flocculating yeast, 1cm² in suspension, approx. 2 litres of yeast slurry at bottom of fermenter).
  • Add dry hops (4 days @ 14°C)

    Day 10: (Week 2: Monday)
  • Crash cool to approx 1°C for 2 days.

    Day 11: (Week 2: Tuesday)
  • Transfer to Cornelius keg (approx. 2 litres of hop debris left in bottom of vessel)
  • Add White finings
  • Carbonate @ 30 PSI for 48hrs, then drop to 10 PSI



    Taste has a VERY intense hop flavour, much stronger than the commercial Punk IPA. Probably will drop the dry hop rate by 50% next time.
