Filtered water through charcoal filter. Added 2.3 tsp of gypsum salt to mash and 10 ml of lactic acid to mash. Was shooting for 5.36 ended up with 5.36. Recovered 13 gallons of wort brought to a boil. Added first hop addition to first running's in the boil pot. Added last hop addition at flame out. Let wort sit for 10/5 minutes before cooling. Ended up with 10.25 gallons of wort with a reading of 1.069. Adjusted fermenter levels to bring wort up to 5.5 gallons with distilled water. Pitched yeast that was 72 degrees into 78 degree wort.
