Trying a dunkel as a slightly different kind of lager while it's nice and cool here in Melbourne, Australia. I remember it being darker than this.
I am following the lead largely of Homebrew Academy (https://homebrewacademy.com/munich-dunkel-recipe/) and secondarily of the Home Brew Beer book by Greg Hughes.
Substituting Victory malt out for biscuit malt, because Victory malt is nearly double the price. Bad time to use American malt.
Limiting Carafa II to 3% even though I would love to make this darker. Apparently adding light chocolate malt would risk bringing roastiness, so not now, not here.
