Mashed in at 174F on Digiboil kettle (anvil 10 down for repairs).
mashed everything into 4 gallons of pre-chemical treated R/O water.
measured ph at 3.03 before mash in.
Mashed about 10 minutes and had 1.025 !!!!!! pH was about 4.8. added some acid, did recirculation throughout the abbreviated mash.
drained the bag of grains above the kettle, had about 3.5 gallons. added water to 4.1 gallons-ish. Of course, being RO water it's 7.0 pH, so now I have 4.8 pH again. add MORE tartaric acid.
Unfortunately, refractometer showing 1.020, so added to about 4.75 gallons of wort, now measuring under 1.020 - maybe around 1.016 on the refractometer but it's routinely .003 high so maybe lower and it's not sure.
fun fact, first run with the replacement tilt green. Hopefully it's as accurate as the previous one.
By Brewers Friend's numbers, I need to have about 1.016 pre-boil gravity. assuming the refractometer is optimistic, 1.019-ish is good.
Checked pH at 4.75 gallons, got 4.65 ! Close, I need 4.0-4.5, so added another .75 tsp of tartaric acid.
It's now almost 3PM, not even started the admittedly short boil.
By now, I find one of my selected hops, HZ107, appears to have spoiled, the pellets are disintegrated and it doesn't smell right. Trashed it, subbed in Simcoe and recalculated/rescheduled.
took pH again, meter failed. 45 minutes and a call to tech support later, got a reading of 3.5...low, but possibly ok.
went into the boil, took refractometer readings and got as low as 1.019 - which was wrong. Put the immersion chiller in at 15m left.
stopped the boil and hit the chiller for about 1 minute to drop to 172F. Set the kettle for 172, restored power and stabilized the temp at 172. Added in the hops and whirlpooled for 20m. Pulled the hops, killed power to the kettle and restarted the chiller.
The chiller got to an indicated 72F so t/f to the fermenter. Threw in the tilt and got 1.025 :-( Added water to drop gravity to 1.018
checked pH and got 4.1
connected the heater/chiller, Pitched the yeast about 1745 on 12/13/2025.
