Steep grains in 2.5 gallons of 150-165 degree water for 20 minutes. remove and drain, but do not squeeze grains after steeping.
Bring to a boil. Add all LME and BME to the boil, continuously stirring while adding to prevent scorching, and add 1 oz Columbus hops.
Boil for 30 minutes, then add Wiliamette hops.
Boil for 25 minutes, add the Coffee Spice pack.
Boil for 5 more minutes, then terminate the boil.
Add to the fermenter after the temperature drops to 75 degrees and pitch yeast.
