Notes
Boil Notes:
90 min boil, but very gentle.
Dextrose Addition:
Add the 2.3lbs of sugar into the whirlpool after the boil. This should bring the OG to 1.075, and total estimated IBUs down to 33.
Fermentation Schedule:
Pitch at 68F
Allow to free rise to 78F over 4 days
After fermentation, lower to 28 (or as low as I can get in fridge) for 3 weeks.
Carbonation:
Force carbonate to 2.5 volumes
Raise to room temp and prime with corn sugar for 2 additional volumes (get to 4.3)
Let it naturally carbonate for 2 weeks
Cool to lagering temp and lager for 6 weeks
Fining
After carbonation, if necessary, fine with gelatin.
