Mash-in: 66°C for 60 minutes (slightly lower mash temp helps reduce unfermentable sugars, making it more fermentable)
Mash-out: 75°C for 10 minutes
Want it more bitter or less sweet? Add more sulfate (gypsum) and reduce crystal malt a bit. Want a fruitier twist? Swap Amarillo for Galaxy or Nelson Sauvin in dry hop
Final Gravity and ABV Target
OG: 1.060 (instead of 1.066)
FG: 1.010–1.012 (use a slightly higher attenuation yeast like W34/70)
ABV: ~5.5–6% (depending on your final FG)
Fermentation: Maintain fermentation temperature at 10–12°C for clean lager character, then lager for 3+ weeks at 0–2°C for a crisp finish.
Whirlpool at ~80°C for 20–30 minutes. Dry hop during cold crash or right before lagering.
