Step mash from ambient to 118F, 140F, 154F and finally 170F with 60 minute rests in between each step. The betaglucan rest at 118 is the most critical. 30-45 minutes should be enough and only go to 60 minutes if you find that the runnings are still too thick. Going too long can risk the enymes breaking down the cell walls and resulting in a thin body with little head retention. Recirculate until the runnings are free of particles, then run off into the kettle. Lauter to kettle then sparge for a total pre-boil volume of 20 gallons (80L). Boil for 60 minutes—or longer, if you like—adding hops and bog myrtle (if using) according to the schedule. (Optionally, brew a hop tea instead—see Brewer’s Notes.) Cool to about 99°F (37°) and pitch the kveik; ferment warm or at ambient temperatures. Primary fermentation should take only a few days, then chill, package, and carbonate as desired.
