We brewed this TX Brown Ale on our pilot unit here at New Magnolia Brewing in Houston, TX. The color was spot on. Nice malty aroma with hints of pine, grassy notes I assume from the Cascade hops. Flavor profile starts of with mostly malt components then turns to pine, citrus notes with a slight dankness and a light bitter finish. This beer was close to a 5 star when I first tasted two days after dry hopping which all of the above seemed much more intense. The finished, carbed product took a step backwards and the intensity had dropped a bit. Next time I would probably drop the whirlpool temp, increase both the whirlpool and dry hops by 20% and increase the percentage of Simpsons DRC malt.
