Ginger and cinnamon added with 5 mins left in boil.
Consider moving them to fermenter or augmenting with a tea later on if spice profile not strong enough.

Honey added at flameout to 'shock' pasteurize but also to preserve some honey flavor. Another option would be to add to fermenter off heat.
