Preliminary Results
Brew Day -- 4 Jun 2022;
Original Gravity: 1.090; lower than targeted OG
Fermentation slowed to a virtual stop at about 8-9 days
Final Gravity: 1.007; lower than targeted FG
Calc'd ABV: 10.9%; lower than targeted SBV
Brew Day +11 -- 15 Jun 2022 : Moved to glass carboy and dry-hopped

Bottled this beer on June 26. Aroma was great - very close to Waldo's but more citrusy. Excited to see how it conditions in the bottle.

Result was less sweet and slightly more bitter than Waldo's. Aroma was great - more citrusy - not as boozy. Flavor was good but not a match. In summary, a good beer but not as close to the target as hoped. Primary adjustments needed to fermentation and the hop bill/schedule.
