Notes

Prepare smoker with Mesquite pellets. Note: Mesquite has a very strong smoke flavor. Consider using other pellets such as Hickory or Apple.
Smoke 3.5 lbs of the Marris Otter malt in a single layer on a screen for an hour. Let the malt cure in a covered container for 5 days prior to brewing. Add to 6.5 lbs Marris Otter when brewing.
I have brewed a 2.5 gal version of this recipe twice and very happy with it.
