Hi, I'm interested in brewing a NEIPA with the MJ M15 yeast. What kind of esters did you get and at which temperature did you ferment. Do you think there was any bio transformation between yeast and dry hops? Did the yeast continue to ferment in the bottle with some overcarbonation or did the beer stay at 1.021?

Didn't get any pronounced esters at all. Just a lot of sweet, dark, juicy hop flavour from the Citra. Some of that may come from the yeast, but I haven't tried the recipe with a more anonymous yeast, so couldn't tell. I fermented at 18 deg C and added dry hops in two stages after four days at gravity 1.022 and at 9 days. Cold crashed to 3 degrees C and added 6 grams of sugar with the bottling. The carbonation was according to 6g and came out very well. No overcarbonation with this one, so it must have stopped there.

I wanted a sweet and juicy brew with high FG, so that's why I went with the M15 and the relatively high mash temp. Came out lower on OG and higher on FG than recipe predictions, but taste and feel was right there I wanted it anyway. I'll definitely do this again!
