0905 - mash in at 152.3 - check it in 25 minutes
0932 - stirred mash and check temp - good 149.5-150, mash another 30 min & check conversion
1018 - checked at a little after 1000 and iodine test said conversion was complete, but gravity (refractometer) was only 5 (1020)... so since temp was down to ~145, I raised it back up and we'll check in 30 minutes
1056 just checked mash gravity now at 10 brix (1.040) - stirred while heating back to 150F, add 30min
1126 pulling the grain bag, regardless....11 brix (1.044)
really need a way to let the grains drip over/into the kettle...
at 5 min left to the boil I added about a pound of honey
we're not going to hit the gravity that we were supposed to (minus the honey) ... the volume of wort is too high in the kettle - I can't see the low squiggly line, so it's def going to be more than 3g
chilled total of 20 minutes
1064 / 15.4 brix in fermenter, but volume is > 3g
just adjusted the brewhouse efficiency so that the OG reflects actual (incl. honey)
