This is my first attempt at altering a recipe. A bit of a use-up brew. I was going to buy all the extra hops and yeast I needed, but in the spirit of thriftiness, I've decided to make a hybrid of Old Tom, using an American yeast and substituted the UK hops for US and German varieties. I plan to brew straight after a rye IPA,so I should have plenty of healthy cells to dump my wort onto.
