Notes
1) 5.5gal water, heat up to 160F
2) Add grain, steep at 150F for 60 mins
3) Remove grain and rinse (sparge) 1.5gal 180F
4) Heat up to boil (203F)
5) Add 1oz simcoe at 60 mins
6) Add 1oz simcoe @ last 5 mins
7) Add 2oz Amarillo hops at End of Boil
8) Chill to ~70F, rack to carboy
9) Take hydrometer sample (1.053)
10) Pitch yeast
11) Ferment for 5 days
12) Dry hop, 1 oz simcoe 1 oz amarillo
13) Ferment another 5 days
14) Bottle, condition for 1 week at 65F
15) Chill and serve
