Start with 8 gallons of water @ 158 degrees. Target strike temperature is 153 for 75 minutes grain bag in. After 75 minutes increase temp to 170 for 10 minutes. Drain and squeeze and proceed to boil.
Brewed 2/25/2021. Fermentor set at 68 degrees. SG 1.061.
Active fermentation in 24 hours.
Transferred to secondary 3/10.
Bottled 4/5.
First taste 4/27. Very clear. Nice head retention. Very good beer. IBU is just about perfect bitterness. Citrus notes late, but great.
This is a do again beer.
