Oxygen addition: Chill wort to fermentation temperature, then flow .5 liters/minute for 4 minutes. Set spunding valve to 5psi and hold pressure for 60 minutes. Then de-pressurize and pitch.
Maintain press to near zero to allow the yeast to "breathe" and produce signature Belgian esters.
When within 4 - 5 points of FG (1012), reset pressure to 20-22 psi to achieve 3.2 Volumes at 38F. The yeast will generate sufficient CO2 to hit this pressure naturally.
